Zoodle Pesto Salad

 A perfect meal for those hot summer days when you don’t want to cook anything. It’s also really easy to customize if you have picky eaters. Either make a big batch for everyone to enjoy, or spread out all the fixings and let everyone create their own individual meal. Real pasta can easily be swapped for zucchini zoodles.

INGREDIENTS: 

  • 3 large zucchini, spiralized into noodles, (about 4-5 cups of zoodles) 
  • 1 yellow, red or orange bell pepper, chopped 
  • 1 pint grape tomatoes, quartered 
  • 1 cup cucumber, chopped 
  • 1/4- 1/2 cup pesto (you want enough to coat the zoodles) 
  • 1/4 cup sliced Kalamata olives

DIRECTIONS: 

  •   Add zucchini zoodles to bowl 

  •   Mix in 1/4 cup pesto (add more if needed) 

  •   Add rest of veggies and mix together 

  •   For best results let it set in refrigerator for 20-30 minutes so the flavors can mingle 

 Serve & add any additional ingredients

Optional Additions: 

  • Fresh parmesan or feta – sprinkle some freshly grated parmesan for a cheesy addition. 

  • Vegan parmesan or feta – add vegan nut cheese 

  • Macadamia Nut Crumble - brings a yummy crunch and vegan cheese flavor (available in Wizardly Foods Shop

  • Paprika – add a little smoky heat with a pinch of paprika 

  • Sundried tomatoes 

  • Marinated artichokes 

  • Fresh Spinach 

  • Fresh herbs (basil, dill, oregano or thyme)
